Lamb Kofta Burgers

500 grams of lamb mince
Mix with:
A small mixture of chopped mint and parsley
2 tsp minced garlic
1 egg
1 tsp all spice
1 tsp ground ginger
1 tsp black pepper
1 tsp cayenne pepper
Season with salt
1 tbsp tamarind
Half cup of bread crumbs
Bind mixture together by hand (using gloves) then shape several small burgers about the
size of your hand palm.
Place in smoker at 250 degrees F and use Cherry wood smoke until the internal temp of the
lamb is 135 degrees F. Then sear outside of burgers on a hot plate with oil.

Tzatziki Sauce
Grate cucumber and squeeze moisture out
Add Greek yoghurt and olive oil
Add Dill and mint
Finish with some lemon juice, garlic and salt
Combine together

Use small pita bread pockets and place sauce and some spinach leaves inside.
Place small kofta burgers into small Pita bread pockets. Serve with some lemon wedges.
Ready to eat.
